Winter Dinner Party

Can we chat about how difficult it is to stay healthy when it's 30 degrees and 60 mph winds outside?  All I want to do is lay on the couch and snack all day!  However, I don't think K&K would approve!

Tonight we're hosting a dinner party and we really want to keep it simple so we can spend time with our guests!  Today's Christmas/Winter theme dinner menu....

Chips & Salsa and Caprese Salad for appetizers.  Turkey Quinoa Meatballs and Turkey Kielbasa served over Spaghetti Squash with a side salad for dinner!

We thought this Caprese Salad was perfect with the red and green color scheme.  And Trader Joe's Veggie & Flaxseed Tortilla Chips served with TJ's fresh mild salsa is always a family favorite.

Turkey Quinoa Meatballs seemed perfect since we could let them cook all day in the crock-pot while we cleaned the house.  I love crock-pot meals because they are easy, delish, and make the house smell amazing!
 
Turkey Quinoa Meatballs
 
1 lb turkey
1/4 cup breadcrumbs
1/4 cup uncooked quinoa
1/4 cup egg whites
1 tsp salt
1 tsp pepper
1 tsp Bragg seasoning
1-2 jars of marinara sauce (we LOVE Trader Joe's Organic Tomato Basil Marinara)
 
In a large bowl, combine turkey, breadcrumbs, quinoa, egg whites, salt, pepper, and seasoning.  Mix thoroughly.  Roll into balls - about golf ball size.
 
Pour sauce into crock-pot as bottom layer.  Add meatballs to pot.  Top with remaining marinara sauce.
 
Cook on high for 4 hours (or low 6-8 hours).
