Best Bean & Corn Salsa!


Ingredients
- 15 oz can organic Black Beans (drained & rinsed)
- 15 oz can organic corn (drained & rinsed)
- 1 chopped tomato
- 1 chopped avacado
- 1/2 cup chopped fresh parsley or 2 tbsp dried parsley
- 4 tbsp olive oil
- 2 tbsp plus red wine vinegar - add more to taste
- salt and pepper to taste
- Juice of 1-2 limes

Instructions
In a large bowl, mix together the black beans, corn, tomato, avacado, parsley, olive oil, red wine vinegar, salt & pepper, and lime juice.
