It has been ages since I have last wrote. I have successfully been following the Tone It Up (TIU) nutrition plan and lifestyle for about 4 months and it feels amazing - high energy level, lost 5 pounds, & gained muscle. And the best part? My jeans and work pants are starting to fall off!
Now that Fall is rolling around, I find myself starting to crave the usual unhealthy "hibernation" meals - crock pot soups, chili, potatoes, carbs, sweets, etc. I have been doing my best to give in to the Fall foods the healthy way! See below for a delicious Turkey Meatloaf Recipe we tried last night.
Ingredients
2 tablespoons butter (I used organic (and vegan!) Earth balance from Trader Joe's)
1 cup onion, chopped
3 cloves garlic, minced
1 lb ground turkey
1/2 cup breadcrumbs
1 egg (I used 1/4 cup egg whites)
3/4 cup katchup (I used organic from Trader Joe's)
2 tbsp Worcestershire sauce
3/4 tsp salt
1/2 tsp black pepper
Directions
- Melt butter in a skillet
- Cook onion and garlic in melted butter for 5 minutes
- Combine turkey, bread crumbs, egg whites, 1/4 cup katchup, Worcestershire sauce, salt, and pepper with onion mixture
- Press meatloaf into an 8x4-inch loaf pan
- Spread remaining katchup (2/3 cup) on top of meatloaf
- Bake at 350 degrees for 50 - 55 minutes
- Remove from oven and let stand for 5 minutes before serving
The best part....it's even better leftover!
