Turkey Meatball Parm

We've made this delish dinner a few times and it's absolutely amazing and so simple to throw together on a busy week night!  I think the Arrabiata sauce is what makes the dish so flavorful and I'm not even a spicy food lover!


Ingredients

3/4 cup onion (chopped)
1 teaspoon olive oil
1 lb ground turkey
1 clove garlic (minced)
2 Tbsp melted butter (we use Earth Balance)
1/2 cup breadcrumbs and/or Panko
1 Tbsp Italian seasoning
1 jar Arrabiata sauce
1/2 cup shredded Mozzarella cheese

Directions

Preheat oven to 375 degrees.

In a bowl, combine the turkey, 1/2 cup onion, melted butter, breadcrumbs, and Italian seasoning.  Mix everything together with your hands.  In the meantime, heat the olive oil and remaining 1/4 cup onion in a pan.

Begin rolling meatballs about an inch or two in diameter.  Place meatballs in pan.  Turn every few minutes to cook evenly.  Heat meatballs in pan for about 10 minutes.  Note, the meatballs do not need to be fully cooked in the pan since they'll be going in the oven.

In a 9x9 baking dish, spread a layer of Arrabiata sauce.  Place meatballs in the baking dish.  Cover meatballs with remaining sauce.  Cover the dish with aluminum foil and bake for 15 minutes.  After 15 minutes, remove the foil and sprinkle the shredded cheese.  Bake another 15 minutes without the foil.

We usually serve with a small portion of angel hair pasta.
